What is Thaumatin?

Thaumatin, also known as Talin, is a natural high-potency sweetener extracted from the fruit of Thaumatococcus daniellii, a tropical West African plant. Its CAS number is 53850-34-3. It is 2000–3000 times sweeter than sucrose, featuring a mild licorice-like aftertaste. It has almost no calories, does not raise blood sugar and will not cause tooth decay. It is heat-stable and acid-resistant, compatible with most food processing conditions.
